curried blue cheese spread


 

this is a surprisingly good and unexpected appetizer. the mix of cream cheese, blue cheese, and sauteed apples with curry, offers a blend of unusual flavors that work extremely well together. this recipe has been taken to several parties and the response is always great. my sister is the one who turned me on to this and she found it on the wild oats website a few years back. whole foods has then purchased the food stores so i assume it can be found there as well.

ingredients:

8 0z cream cheese

4 oz crumbled blue cheese

1 tbs unsalted butter

1 small tart apple, peeled, cored, and diced

2 garlic cloves, minced

kosher salt and freshly ground pepper to taste

1 tsp curry powder

1/2 c pine nuts, toasted

plastic wrap

directions:

bring the cream cheese and blue cheese to room temperature. cream  both cheeses together and set aside. heat the butter in a saute pan, add the apples and garlic, and cook until soft (about 2 minutes). add the curry powder, coat thoroughly, and cook for about 1 minute. add salt and pepper to taste. add the apple mixture to the cheese mixture and mix well. take a sheet of plastic wrap and form into a log or a chubby disk. place in the freezer and chill for about 30 minutes. take cheese out of the freezer, unwrap, and press the pine nuts onto the sides and top of the cheese (or you can lay the pine nuts on a cutting board and roll the cheese firmly over the pine nuts in order to adhere them to the cheese. place on a platter and serve with toasted baguette rounds or pita sticks.
