a simple, tart, and subtle champagne vinaigrette.
1/2 c champagne vinegar
2 tsp dijon mustard
1 tsp minced garlic
juice of 1/2 a lemon
1/2 tsp freshly ground black pepper
1/2 c extra virgin olive oil
1/4 c honey
in a small bowl or glass jar, combine all the ingredients less the olive oil. mix together thoroughly, then slowly drizzle in the olive oil to combine. refrigerate or serve immediately.
