pickled red onions


this is the easiest way to alter a red onion. for those who find a raw red onion a bit strong, pickling them takes that bite out of them and transforms them to a tangy yet onionish condiment. there are so many uses for them. we use them for out burger recipes, sandwiches, in pasta salads, in fish tacos, and the list goes on…

there is little effort and time in this method and they can be kept in the refrigerator for 2-3 weeks.

ingredients:

1 small onion

1 cup red wine vinegar

method:

thinly slice the onion and place in a medium-sized bowl. pour in the red wine vinegar. let sit at room temperature for 15 minutes or up to an hour for a better result. can be refrigerated if kept in an airtight container.
