i couldn’t help it but when passing the locally grown poblano peppers featured at the local market, they were immediately in my basket. a box of orange and green treasures. pondering what to do with them this weekend and i finally decided to experiment… burgers. we all love a good burger, and at our house, we eat a lot of turkey burgers. there are many turkey burger recipes to share but today’s burger is made with ground chicken. this is a great burger to end the summer with. a lighter alternative packed with flavor.
1 lb ground chicken
1 poblano pepper, grilled
1 ear of corn, grilled
2 scallions, grilled
2 pieces bacon
2 tbs basil
salt and pepper to taste
heat grill ahead of time. grill the corn, green onion, and poblano. remove from grill once items are charred and cooked thru. place poblano in a bowl and cover with plastic wrap. let it sit and sweat for at least 10 minutes. once the poblano has cooled, remove from dish. peel the skin from the pepper and remove the seeds and membranes.
remove corn from the cobb. thinly slice the green onion and chop the poblanos. combine the first 8 ingredients until well incorporated but do not handle the meat too much. form four patties.
place the patties on the grill. in the meantime, slice the chiabatta buns, tomatoes, and mozzarella.
place the buns on the grill once the chicken burgers are almost finished.
remove from grill. arrange buns, burgers, and additional ingredients as desired.
condiments can include a good dijon mustard, ketchup, and mayo.
